Ingredients:

 40 g Almond flour
 18 g Golden flaxseed
 8 g Coconut flour
 1 tsp Baking Powder
 ¼ tsp Xanthan Gum
 56 g Unsalted Butter
 2 tbsp Heavy cream
 40 g Cacao Powder
 ¼ tsp Salt
 2 tbsp Erythritol
 2 Eggs
Vanilla Cream
 100 g Unsalted butterroom temperature
 150 g Mascarpone or cream cheese
 2 tsp Vanilla extract
 2 tbsp Erythritol

Directions:

Brownie Cupcake

First, preheat the oven at 180°C and put the flax seeds in a glass filled with warm water.

In a medium bowl, put the almond flour, coconut flour, baking powder and xanthan gum.
Mix until combined.

In a second bowl, put the butter, heavy cream, cacao powder and salt. Melt over a water bath.

Remove once melted and let it cool.

Once cold, add the eggs and the sugar and mix very well until a smooth and thick mixture.

And the flaxseed & the chocolate mix to the dry mix (almond flour, coconut flour ...) and mix very well.

Put the mixture in a mold and bake for 15 mins until a toothpick inserted comes out clean.

Vanilla Cream

Whip the butter with your robot until it becomes creamy. Stir in the cream cheese while continuing to whisk.

Add vanilla and the sugar.

Whisk at slow speed, scraping the edges of the bowl regularly until the mixture becomes clearer and creamier.

you can make a hole in the bottom of the cupcake and using a piping bag incorporate vanilla cream inside the cupcake or just put just above the cupcake.
