Caramelized Almond Cake


Ingredients:

Cake
 1 cup Almond flour
 4 tbsp Butter (melted)
 3 Eggs
 0.25 cup Psyllium husk powder
 0.25 cup Cocoa powder
 0.25 cup Unsweetened Coconut milkYou may replace it with heavy cream, but don't whip
 0.25 cup Sour creamOr labne
 0.25 cup Erythritol
 1 tsp Vanilla
 1 tsp Baking powder
Cream Cheese Filling
 227 g Cream cheese
 114 g Butter
 0.25 cup Sour creamOr labne
 0.25 cup Erythritol
 1 tsp Vanilla

Directions:

Mix cake's dry ingredients in a bowl

Melt butter and add it to the dry ingredients along with sour cream, eggs. Use a hand mixer to mix this together.

Add coconut milk to the batter and mix with a spatula till it becomes spreadable

Spread the batter over a baking paper and bake for 15 minutes at 350F

Meanwhile start preparing the cream cheese filling by mixing all ingredients using a hand mixer

When cake is done, let it cool down. Spread cream cheese all over the cake.
* Now these fillings are optional :

- For one half of the cake i used a previously prepared Caramelized Almond Cake (Link in the notes section) You can skip the cake and use only caramelized almonds.
For the second half i added plain pistachios

- I melted few cubes of Hershey's unsweetened chocolate with heavy cream and sweetener to make a chocolate sauce which i added in between layers

Roll the cake up gently. Use a knife to scrape off any excess filling.
