Start by adding the anise, cinnamon, caraway and xylitol to the water and mix well. Use a hand mixer for better result.
Bring the mixture to a boil. Start adding the xanthan gum while mixing at the same time (preferably with a hand mixer). Use a small sieve to sprinkle the xanthan gum in small quantities to avoid coagulation.
Add the coconut flour in small batches and mix well.
Let it boil for few minutes while stirring occasionally.
Remove the mixture and let it sit for 5 min. Meanwhile, add the gelatin powder to a small amount of cold water (~4 tbsp of water) and let it sit for 3 min then add them to the original mixture and stir well.
Pour the mixture in small containers and refrigerate for few hour (or overnight) then add coconut flakes and your preferred nuts on top and serve.
To avoid laxative effect from excess xylitol/erythritol you can substitute part of it with liquid stevia
