Follow the usual steps for fathead dough
Start by melting the mozzarella cheese for a minute in the microwave
Once it's perfectly melted, add the almond flour, cream cheese and egg and mix well. You might need to heat it again but no more than 30s to avoid cooking the egg.
Make sure you incorporate all the ingredients very well.
On a parchment paper spread the dough and add another parchment or nylon paper on top to help you flatten it. This recipe makes 2 large doughs.
Bake it on 200 degree C for 6-7 minutes or until golden.
Mix the oil with thyme, sesame and sumac in a separate bowl.
Once the dough is golden, spread the oil with thyme on top and cover it well. Bake it for just 2-3 minutes or depending on how crispy you want it.
