These pink ombré pancakes will make anyone feel just that little bit more special


Ingredients:

For the batter
 4 Eggs
 5 tbsp Unsweetened coconut shreds
 1 tbsp Sweetener
 1 tbsp Vanilla
 1 tsp Baking Powder
 1 Small beetroot boiled and pureed
For the chocolate sauce
 0.50 tbsp Melted Coconut oil
 1 tbsp Sweetener
 1 tbsp Unsweetened cocoa powder
 1 tbsp Water
Yield: 8 pancakes

Directions:

Mix all the ingredients ( except for the beetroot purée) until a batter is formed.

Lightly spray a non-stick frying pan ( i used coconut oil). Pour 2 tbsp of the mixture into the pan.

Add one tsp of the beetroot purée to make a pale pink color. Pour 2 tbsp of the mixture in the pan.

Keep on adding 1 tbsp of the beetroot purée each time until it reaches a dark color.
