Hi, I was looking for a recipe for RIZ AU LAIT (rice pudding) but none used konjac rice, so I wanted to try ...

As a result, it is not really the same texture and taste as a real RIZ AU LAIT but the smell and taste are so close ..

This recipe is for 4 cups of Riz au Lait


Ingredients:

 50 g Konjac Rice
 3 cups Almond milk or coconut milkCoconut milk was used in this recipe
 1 ½ tsp Vanilla extract
 ½ tbsp rose water
 1 tsp Xanthan gum
 1 tsp Agar Agar ( gélatine alimentaire / OPTIONAL)
 2 tbsp Erythritol/Xylitol

Directions:

Heat the milk on low heat for 5 minutes.

Stir in sugar, Konjac rice and vanilla extract, then mix well.

In a glass, put some cold water and xanthan gum, mix well and stir in rice pudding and mix well

In another glass put some cold water and agar agar and incorporate it into the mixture too - mix well

boil over low heat and mix at the same time, until the rice is soft

Ready to pour into your bowls or glasses and put in the fridge
