Ingredients:

Caramel Peanut
 5 tsp Xylitol
 25 g unsalted butter
 1 cup Peanut i used salted Peanut but can use unsalted
Chocolate topping
 150 g Dark chocolate (Lindt 90%)
 1 tbsp Xylitol
 2 tbsp Whipping cream

Directions:

Caramel

Put the 5 tablespoons of Xylitol in a saucepan over low heat until the sugar melts.
Increase over medium heat for 2 minutes and add the butter and mix well.
Increase the heat a little more until boiling and the color becomes slightly golden

Add the peanuts to the caramelized sugar and mix well.

In small molds of your choice, put the caramel peanuts in the bottom and leave to cool

Melt chocolate in a bain-marie with sugar and cream.

(If you find that the chocolate is very solid after being melted, add a little liquid cream. it does not have to be very liquid or very solid)
