Ingredients:

 250 g Cauliflower
 100 g Cream cheese, softened(used puck)
 2 tbsp Rice vinegar
 1 tbsp Soya sauce (coconut aminos or liquid aminos)
 1.25 tbsp Mayo (low carb)used dambert mayo
 1 Cucumber
 ½ Avocado
 100120 g Salmon

Directions:

After washing the cauliflower, bring it to a boil, make sure not to over cook it. Set aside for 20 min to dry

Using a shredder, shred the cauliflower into rice-sized, if you find that the rice cauliflower are wet after shredding, use a fine mesh to strain it!

Transfer the rice cauliflower into a bowl, season with the soya sauce and mix, then add the rice vinegar, mayo and the cream cheese forming a mixture ! Put it in the refrigerator 10-15 mins to cool.

Meanwhile, slice off the cucumber each side. Discard the middle, and slice 2 side pieces into small strips.

Slice 1/2 an avocado into small strips and scoop out the shell.

Put a nori sheet on a bamboo roller covered with saran wrap(this helps with sticking)
Spread some of the cauliflower rice mixture over the nori sheet. Make sure it is a thin layer

Place all the filling items into the sushi roll, layering whichever flavors you want (salmon, avocado and cucumber)

Roll sushi tightly using bamboo. ( check videos on youtube)
