You can’t but fall in love with this lemon tarte at first bite.


Ingredients:

For the crust
 ¾ cup Coconut flour
  cup Butter or coconut oil
 2 Eggs
For the lemon filling
 ½ cup Lemon juice
 4 Egg yolks
 ½ cup Sweetener
 1 tbsp Lemon zest
 4 tbsp Butter

Directions:

1. Mix all the crust ingredients until a dough is formed.

2. Let the dough cool for an hour.

3. Press down the dough in a tart pan. Using a fork, press to make holes on the bottom of the crust.

4. Bake at 180 degree for 15-20 minutes, until golden. Cool completely.

5. Whisk all the filling ingredients. Fill a large pot with water to create a double boiler.
Heat over medium heat. Place the heat proof bowl above it. Whisk constantly for 8-9 minutes, until the mixture thickens.

6. Then fill the tarte crust with it and refrigerate.
