In a saucepan, warm the almond milk, sweetener, 0.5 cup heavy cream, and mint.
Once the mixture is steaming, remove from heat, cover, and let stand for an hour to infuse the mint flavor.
Remove the mint from mixture, divide the amount in half and discard the rest
Blend the remaining 0.5 cup of heavy cream, mint leaves, xanthan gum, and vanilla extract in a food processor.
Pour into 4 serving glasses and refrigerate
