Very quick and easy chewy peanut butter cookies with a hint of espresso flavor !
Ingredients:
1 cup Peanut butter
1 Egg
2 Egg yolks
0.50 cup Erythritol
1.50 tsp Espresso powder or Nescafe
0.25 tsp Vanilla extractoptional
0.25 tsp Cinnamon powderoptional
Directions:

Mix all in one bowl using a spatula until a cookie doigh batter forms.

Scoop into 12 cookies and bake at 350 degrees for around 12 minutes
