Put 2.5 cups of the pistachios in the blender and turn them into a powder mixture. Keep the rest of the pistachios for the topping.
Mix the almond flour with the pistachios.
Add xylitol or erythritol.
Add the butter (melted).
Add the rose and blossom flower water.
Mix well and turn it into a dough.
Spread the dough in a pan. Add some sorbitol to the top. Spread the cottage cheese.
Add again some liquid sorbitol.
Cover the top with the powdered pistachios.
Let it rest in the refrigerator and serve it with liquid sorbitol.
