The well known Lebanese turmeric cake in a muffin form and keto friendly


Ingredients:

 1 cup Tahini
 ¾ cup Xylitol/Erythritol
 7 drops Stevia Drops (if not available, add more xylitol)
 1 tsp Vanilla Extract
 1 cup Warm water with aniseOnly use the flavored water for the recipe without the Anise seeds
 2 Eggs
 Roasted sesame seeds
 2 cups Almond flour
 2 tsp Turmeric (عقدة صفرة)
 2 tsp Aniseed powder (يانسون)
 3 tsp Baking powder
 ½ tsp Xanthan gum
 1 tsp Sea-salt or pink Himalayan salt

Directions:

Bring the anise to a boil in a cup of water

Add to a bowl the tahini, Xylitol, stevia, vanilla, eggs, warm water with anise (not boiling)

Use a mixer to mix the ingredients until the xylitol is dissolved

In a separate bowl mix the dry ingredients well. Almond, turmeric, aniseed powder, baking powder, xanthan gum, salt.

Add dry ingredients to wet ingredients and mix well using the blender until all the dry ingredients are incorporated.

Pour the mixture in a muffins tray

Sprinkle the roasted sesame seeds until all the top is covered.

Bake on 180 degrees Celsius for 40 min or until it’s dry enough.

Wait to cool or refrigerate and serve
